One of my favorite recipes:
German Alt Beer
3.3 lbs Plain Light Malt Extract 3.3 lbs Plain Amber Malt Extract 12 oz. Crushed Crystal Malt 1 oz. Black Patent Malt 1 1/2 oz. Bittering Hops 1/2 oz. Flavoring Hops 5 oz. Priming Sugar In 2 gal. of water, bring grains to a boil. Remove from heat. Remove grains, add malt. Add bittering hops. Boil for 45 minutes. Add flavoring hops, boil for 15 more minutes. Pour wort into fermenter. Add 3 gallons of water. Cool to 70 degrees, add yeast. A fellow homebrewer sent in the following variation for Alt Beer! Date: Sun, 8 Feb 1998 14:13:36 Bob, I have tried the following modification on your Alt Bier. Although it is a bit heavy, I think it is an excellent beer: 3.3 lbs. German light malt extract 3,3 lbs. German amber malt extract (add both extracts at start of boil) 1 lb. Crushed Crystal malt remove at start of boil. 1 oz. Chocolate malt remove at start of boil. 1.5 oz. Perie hops, 8.1% 60 minutes boiling 0.5 oz. Tettnanger hops, 4.7% 60 minutes boiling 1 TSP. Irish moss - last 15 minutes of boil 3/4 cup molasses to prime Wyeast # 1007 liquid yeast culture Primary fermentation two weeks at 65 degrees F Secondary fermentation one week at 65 degrees F My next beer will be a light wheat beer.
